Roasted Clams with Garlic, Lemon and Red Pepper

The mixture of bread crumbs, garlic, red pepper and lemon slices is roasted around the clams instead of stuffed in them. It absorbs the juices from the clams but gets nice and crisp in the oven – unlike the soggy fillings in most stuffed clams. You still get bread crumbs and clams in each bite, but the flavors are much brighter, and the textures are perfect. This is a great way to serve clams to a crowd. Added bonus: no need to shuck the clams.
